Meet Edinburgh's friendliest staff


Tony and Angela

On a daily basis you can see Tony or Angela in one of there restaurants, hands on as they only know how.

Tony very much the original Vittoria baby has been in sole charge since 1993 and has steadily expanded the family business to its size of 3 restaurants and employing 125 staff.

Tony has worked in every area of the restaurant from dishwasher to barman, waiter to head chef, now very much the figurehead of the restaurants loving to work in all three.

Tony says " My restaurants are like my family, I love no one more and no one less, I will always have a soft spot for Vittoria on Brunswick Street, as I grew up and trained there but now I am also surrounded by very competent managers who are constantly being trained by me to carry out my vision throughout our restaurants" Angela you will always see at Brunswick street holding the reigns in Tony's absence, she is responsible for the decoration and interior design of the restaurants and dealing with group reservations and not too forget being a fantastic wife and mother to Tony and her two sons Alberto, Leandro (busy women she is!).



Mum and Dad

Alberto and Dina came on honeymoon to Edinburgh in 1967, you could say they still are on honeymoon, the original Vittoria was owned by Albertos brother Tommaso from 1963 intil 1970, his wife Vittoria (that's where the name came from) decided to sell up in 1970 to Alberto and Dina to return to Italy. Back then the only Italian dishes were Spaghetti and Pizza, a lot more traditional dishes were offered, through the years the menu became more adventurous with Lasagna and Minestrone and Pizzas with lots of toppings, back then still a rarity an espresso coffee or even a cappucino (lattes didn't appear till the 90's)

They handed the running of the business to Tony and Angela in 1993, but are far from retired still coming most days to catch up on our regular customers and to see what’s new within all three restaurants.



Antonello - Manager / Head Waiter

Antonello joined Vittoria Restaurant in 2005 as a waiter. Knowing instantly he had what it took to be a manager he was promoted in ... In charge of the daily running of Vittoria Restaurant and of .... staff, Antonello makes it look like a walk in the park. Passionate about his role, he passes his knowledge and determination of delivering high standards to his fellow colleagues.

 

Sante – Assistant Manager

Joined Vittoria firstly in January 2005 then returned again in April 2007. A dedicated, highly motivated and industrious individual who has developed the necessary skills to work in a wide range of trusted positions within Hotel and Restaurant industries throughout Europe and USA. Sante looks after the running of the restaurant in Antonello’s absence. (Image to follow)



Jarek - Head Chef

Has been at Vittoria on Leith Walk since 1996 Jarek is the mind and hands behind all of our great dishes. He has great management skills in charge of 35 chefs between both Vittoria on the Walk and Vittoria on the Bridge. With great leadership and organisation skills, Jarek is a great role model for many of our chefs.




Linda - P/A

Linda has been with Vittoria Restaurant since July 2005. Starting off as a waitress then moving to her current position of Personal Administrator to Tony in February 2006. Working in the restaurant trade since 1998, Linda has a great knowledge of the market and concentrates mostly on marketing and human resources.
